(1)英作文なのですが・・・「頭の上あたりは、３cm、両サイドは２cmにカットして下さい。バリカン使っても結構です。」を、英語で伝えるには、どうすればよいでしょうか？　Could you please cut my hair 3 cm in length around the top of head and 2 cm on both sides? では伝わらないでしょうか？

(2)もうひとつ・・・「How you doing?」は「How are you doing?」と違うのでしょうか？
答え方は・・・「I'm doing fine, thank you, how you doing?」が適切でしょうか？

I'd like to have it cut 3cm on top but 2cm at sides. You can use hair clippers.

Could you please でもいいでしょうけど、丁寧過ぎる感じも。

理容室に行っているのでしょうから、my hair は要らないでしょう。3cm と言っているのですから、長さに決まっているということで、in length は不要。

around the top of head 　は頭の上部周り　よりも「周囲」を表すはずなので、一点を表すon, at の方がベター。

both と言わなくても、sides と複数にすれば、両サイドを表せるでしょう。

「How you doing?」　への直接の返事ではありませんが　I'm fine, thank you でいいのではないでしょうか。
